If the water is clear, i'd use neutral colors such as white or black. If water is a bit colored, try orange, chartreuse, or yellow. You might have to just give it a try and find what works best for that particular day. Try rigging up two poles with different colored heads and plastics. See which one is most productive and next time when you go out, you'll know what colors to target.
