It's all about the shot you take........never shoot a deer(or any other animal for that matter) unless you know you have a kill shot. All the great hunters out there have let trophy animals walk because they didn't have a good shot. Know the ballistics of you rifle......shoot enough to be comfortable and the rest will follow. For the record, the bullet is falling the moment it leaves the barrel.
For a 7mm Rem Mag shooting a 140gr Nosler Partition bullet at 2900 fps, at 300 yards it's almost 4 MOA low, which equates to 12" low. There's not a rifle made that will be "Dead on at 100 yds, 200 yds, 300 yds"
I am a big fan of the 7mm chamberings as its bullets feature the best ballistic coefficients. I have a 7WSM that I shoot 180 Berger VLD bullets out of and a 7-08 I shoot the 162 AMAX out of. I HAVE killed deer beyond 500 yards. Matter of fact, we try and set up so we get shots out at greater distances, but then we train for such shots on a regular basis by shooting steel out to 1000 yards.
My short range rig is a bow, but when I am gun hunting close I use my custom 7-08 with 5.5x22x50 Nightforce scope. When the distance increases I'll take my custom 7WSM with 3.8x22x44 US Optics scope.
