Deer and Duck recipes

These two recipes are great. I have never had a complaint and hope you like it as well.

I cooked some backstrap tonight and really did well. Just wanted to share it with everyone.

What I did was cut the backstrap off of the deer and cut that in half (about 12 inches (long wise) worth of strap).

Cut slices in the strap (horizontally) about every inch or so and put fresh cut garlic and Jalapeno in the cuts.

sprinkled fajita seasoning as well as fresh pepper on top of the strap.

Drizzled olive oil on to the strap( very little)

Put some fresh rosemary on top all the way down the strap

wrapped it all with bacon down the 12 inches of strap for taste. About 6 pieces or enough to cover the strap all the way down.

Put it in the oven and cover the pan with foil for about 20 minutes on roughly 325 degrees.

Check after 15 minutes as some ovens heat more than others.

The strap needs to be cooked no more than medium and really is best at medium rare check it so that it isnt cooked to much on the ends. If over cooked this will not be the same.

That should make you want to kick your dog and slap your momma.. Its really good.


Recipe for ducks.

Buy jalapenos ( how many depends on how many breast you are serving) and cut the jalapeno in half from top to bottom and get all the seeds out of the middle.

In a bowl put cream cheese with fajita seasoning and mix together( there should be much more cream cheese than the seasoning but add more fajita seasoning as you taste until it tastes really good)

Make sure the duck breasts are cut in about 1/4 in fillets ( enough to just cover the top of the jalapeno long ways as well as side ways.

You should cut the duck first so you know how many jalapenos to buy.

Fill the 1/2 jalapeno with the fajita seasoning and cream cheese ( put enough but dont over flow the jalapeno with it)

Then put the duck breast that has already been cut in thin slices on top of the jalapeno that is filled with the seasoning and cream cheese.

wrap that jalapeno half in bacon and hold the bacon on with a tooth pick.

put in oven and cook until the bacon is done.

Again, you dont want to over cook this meat either. It needs to be no more than medium.
